• Avocado Soup, with Panela cheese, fried tortilla strips and cream

• Farmer Salad with mixed greens, cherry tomatoes, fresh local cheese, candied pumpkin seeds and roasted garlic-balsamic vinaigrette

• Grilled Shrimp Brochettes with Al Pastor marinade and roasted pineapple sauce

Entrées

• Turkey in Traditional Poblano Mole made with twenty-five ingredients and chocolate, served with pureed plantains

• Oven Roasted Rack of Pork glazed with Honey & Cider, served with roasted cinnamon-apples & sweet potatoes

• Pan Sauteed Filet of Escolar, with soft polenta and pumpkin seed mole with ancho chile

Desserts
• Chocolate-Banana Bread Pudding
• Churros with Chocolate Sauce
