| This week on Vallarta's Culinary Corner, Chef Michel shows us how to prepare his signature dish, Ossobucco. | | Even though he grew up in Zurich, Switzerland, Chef Michel Ferrari has always had a fascination with Latin America. He'd been scouting places for a new restaurant in 2007, when he spotted the en venta (For Sale) sign on the restaurant space at Olas Altas 507 in Puerto Vallarta's Zona Romantica. "I knew that was it," he says.
In September 2007, he opened Trattoria Michel, specializing in gourmet Italian cuisine, and in particular, family recipes passed down through generations. "I come from a family of very good cooks, my grandmother especially," says Michel. "We didn't have much money, but we always had good food and wine." Some of the signature dishes of Trattoria Michel, like Gnocchi Pesto and Bistecca Fiorentina, are his grandmother's recipes.
A member of MORE, the Mexico Organization of Restaurant Excellence, and a proponent of the "slow food" movement, Chef Michel focuses on a true dining experience - from the careful handling and preparation of fresh, organic ingredients, to the rituals of dining itself - tasting, conversing, relaxing and soaking up the atmosphere of his beautiful restaurant, Trattoria Michel.
Chef Michel is the featured chef in the premier episode of Vallarta's Culinary Corner, a new online cooking show produced by SF Productions TV and hosted by Chef Seth Cloutman, the owner of Food by Seth Catering in Puerto Vallarta.
