Puerto Vallarta, Mexico - During our News Years' stay at our condo in the Amapas neighborhood we discovered yet another new restaurant in the area. Bistro Teresa is located in the Costa Linda building along Highway 200 just south of Old Town. And what a find!
Opened at the end of 2010 by two women recently arrived from Mexico City, Bistro Teresa features upscale takes on meat, fish and traditional Mexican fare. They serve wonderful starters and lots of fish. I can't get enough of the sea bass tamales.
The bistro has a sweet, charming open-air setting overlooking the bay, a full bar and some gourmet foods packaged for purchase. Pacing can be slow, so have another cocktail or glass of wine. Laura (Teresa middle name) works the front of the house and Marisol does all the cooking. Currently Laura's niece Rebecca from Mexico City is helping out too.
Everything that comes out of the kitchen is handcrafted by Marisol, and Laura knows how to treat her diners with grace and warmth. They are a class act.
Bistro Teresa is closed on Tuesdays. In addition to fabulous dinners they also serve a limited menu breakfast which is wonderful - chiliquiles, omelets, and fruit plates, as well as lunch.
For the many people who live on the hillside of Amapas or below in Old Town, Bistro Teresa's location is perfect for an easy walk to a fabulous meal. I can't say enough about the place. During the 4 weeks we were in Puerto Vallarta, we dined there probably 8 times. Pricing is moderate plus and well worth it. (We have no involvement in the restaurant, nor did we know these people before we became their guests.)
