This Week, Mexico Sizzles at Daiquiri Dick's Restaurant

Puerto Vallarta, Mexico - When in Mexico, sample authentic Mexican cuisine. There no better place to try it than at Daiquiri Dick's Restaurant in Puerto Vallarta during their Summer Sizzle. Each week a different country is featured. There are three courses for only $299 pesos and choices for each course. There is also a complimentary beverage. Mexico is highlighted August 15 through the 20, 2012.

The staples of Mexican foods are typically corn and beans. Corn is used to make masa, a dough for tamales, tortillas and gorditas, Mexico's version of a pita pocket, and it is also eaten fresh, as corn on the cob and as a component in a number of dishes. Squash and chili peppers are also prominent. The most frequently used herbs and spices are chili powder, oregano, cilantro, epazote, cinnamon, honey and cocoa. Chilis, fresh and dried, play key roles and chipotle, a smoke-dried jalapeño, is also a favorite. Many Mexican dishes also contain garlic and onions.

Next to corn, rice is the most common grain in Mexican cuisine. The Spaniards introduced it in early 1500s and this sparked one of the world's greatest fusion cuisines.

The country offers a wide variety of regional favorites and expect great seafood dishes in any coastal city. Mexican cuisine is very diverse, and Daiquiri Dick's Summer Sizzle menu offers some interesting choices.

• Shrimp and Nopal Cactus Salad
• Fresh Corn Soup with Poblano Chiles
• Scallop Ceviche "Agua Chile" - Sinaloa Style

Entrées

• Chicken Breast stuffed with Corn Mousse and served over Mushrooms sauteed with Serrano Ham, Garlic and Green Onions, with a Grilled Pinapple Salsa

• Grilled Pork Tenderloin served with Sweet Potato Puree, Oaxacan Black Mole and Plantain Chips

• Fresh Seared Tuna Filet served over Pan Finished Pozole sauteed with Ajillo Sauce and Shaved Garlic

Desserts

• Tres Leches (Three Milk Cake)
• Corn Flan
• Lime Sorbet
