This Week at Daiquiri Dick's: Irresistible India

Puerto Vallarta, Mexico - Indian cuisine has been shaped by about a 5000-year history. The vastly different regions, various groups and cultures that traded with each other and contrasting religions all combine to make up the cultural fabric of the food and all added their own flair to dishes.

Aryans first migrated to India around 6000 BC and introduced dairy products because they were mainly nomadic herdsmen. Later Mughals, British, Turks and Portuguese influence also made inroads into Indian cuisine resulting in its present variety and diversity.

Staple foods of Indian cuisine include millet, rice, whole wheat flour and a variety of lentils. The most important or frequently used spices are chili peppers, black mustard seed, cardamom, cumin, turmeric, ginger, coriander and garlic. Many dishes are characterized by the use of the various spices, herbs and other vegetables grown in India. The cuisine is also influenced by the widespread practice of vegetarianism.

• Garbanzo Bean Hummus served on Naan with yogurt sauce

• Grilled Marinated Vegetable Brochette with masala and tomato chutney

• Carrot - Coconut Soup with harissa and crispy leeks

Entrées

• Tandori Chicken served with Basmati rice and mango pineapple chutney

• Pork Loin Vindalo with potato, cardamom, cinnamon, cumin and ginger served with roasted cauliflower and mint chutney

• Salmon Mechi Marinated in coconut milk, cilantro, and mint, grilled & served over sauteed garbanzos with curry oil

Desserts
• Apple Cake
• Coffee Flan
• Lichee Gelato

Enjoy a great sunset and a wonderful dinner at Daiquiri Dick's. Only a couple of weeks left to enjoy the Summer Sizzle menu before the restaurant closes for the month of September. The restaurant will re-open on October 1, 2014.
