Puerto Vallarta, Mexico - Food is always a very important part of Mexican festivities so, to commemorate Las Fiestas Patrias, the staff at Kaiser Maximilian is serving up a special dinner menu featuring traditional Mexican dishes with an elegant and modern spin throughout the month of September.
The colors of the flag are represented in the Mexican dish that is most emblematic of the holiday - Chile en Nogada. It is a poblano pepper stuffed with beef, dried fruits and walnuts, topped with a cream sauce and pomegranate seeds.
According to historical accounts, the recipe was created by the Agustine nuns of the Santa Monica convent in 1821, (the year of the declaration of Mexican Independence,) who decided to prepare a dish with the three colors of the newborn flag, green, white, and red, to commemorate the entrance of Agustín de Iturbide into the city of Puebla.
Chiles en Nogada eventually became one of Mexico's most famous dishes, and it's just one of the traditional Mexican favorites being served up this month at Kaiser Maximilian in addition to the Austrian delights featured on the restaurant's regular menu.
