Award Winning Chef Returns to Puerto Vallarta

Chef Pelayo, as he is known to his friends and clients, was born in Puerto Vallarta and he and his family have lived most of their lives in this beautiful port city. Chef Pelayo began his gastronomical journey working at the Fiesta Americana Hotel with his father, Sr. Felipe Pelayo, also a chef.

To broaden his experience, he moved to the Holiday Inn where he spent 4 years learning each step in the culinary arts. Feeling the need to expand his talents he left the Holiday Inn and began working at the Camino Real.

During his time at the Camino Real, he had the good fortune to encounter Chef Therry Blouet, owner and chef of Café des Artistes, who invited Pelayo to join the staff at Café des Artistes.

Chef Pelayo spent the next 5 years there honing his skills and becoming a top chef winning many culinary awards. After his residency at Café des Artistes, he moved over to the River Café and remained there for 3 years.

In the year 2000 he opened his own business, the Circus, and continued to delight his friends and clients with his magnificent service and extraordinary culinary knowledge. It was shortly after that he felt the need to explore more of the gastronomical world, and decided to travel to Spain where he experienced many satisfying events in Madrid, Barcelona, Seville and Segovia.

After his enlightening and educational journey to Spain, Chef Pelayo returned to Puerto Vallarta, working first at the Hotel Villa Palmar and then at the Hotel Grand Velas Puerto Vallarta.

Today, Chef Pelayo brings his culinary flair and expertise to Bogart's Restaurant, where you can experience the magnificent talents and creations that Chef Pelayo has gathered from around the world.
