Daiquiri Dick's Recipe for Fruit Salsa Laura Gelezunas - PVNN

The Fruit Salsa is one of their creations and the chefs have decided to share this recipe with BanderasNews.
Fruit Salsa
2 cups fresh pineapple, diced 1 cup papaya, diced 3/4 cup orange sections, diced 1/4 cup finely chopped onion 1 tsp serrano or jalapeño chile, minced 2 Tbs fresh cilantro, chopped 1 Tbs fresh lime juice 1 tsp fresh mint, shredded in chiffonade 1/4 tsp Kosher or sea salt
Combine all ingredients in a bowl and toss gently. The fruit should be really fresh and cut uniformly. Though it can be served right away, allow it to sit for an hour or two to meld the flavors. Stir before serving. This is great served in the Crispy Wonton Baskets or spooned over pork, chicken or fish.
