Mark's Bucerias Hosts 'Festival del Sabor' SF Productions December 14, 2009

(SF Productions) | | In this edition of Spotlight on Vallarta, we report on the First Annual Gourmet Festival del Sabor, held in November and hosted by Mark's Bar & Grill. The Festival's first guest chef was Seth Cloutman, owner of Food by Seth Catering and host of Vallarta's Culinary Corner.
Working alongside Chef Jan Marie Benton, Seth prepared a menu that included Green and White Asparagus Soup, Sweet Potato Gnocchi with a brown butter sage sauce, and Foix Gras Toast with fresh fig jam. The entrée was a roulade of New Zealand Veal with goat cheese, mushrooms and swiss chard.
The fish course was Sea Bass stuffed with medallions of lobster and avocado. Dessert was a mouth watering confection of Filo Pastry bathed in caramelized brown sugar, pastry vanilla crème sauce and a compote of poached pears.
"This was our first annual event," said Chef Cloutman. "It was a smashing success, but we look forward to an even larger turnout next year."
