Cooking with Linda at Villa Encanto in Bucerias

Timothy Real Estate Group agent Linda Kennedy de Espinosa takes us to Villa Encanto in Bucerias, where she shows us how to make her own special recipe for a favorite Mexican dish - Chilaquiles.

When you purchase a second home or move to Puerto Vallarta, everyone wants to visit. Since many full- and part-time residents find themselves hosting more get-togethers, Linda takes us to Villa Encanto in Bucerias, where she shows us how to make her own special recipe for a favorite Mexican dish - Chilaquiles.

Chilaquiles con Salsa a la Linda

Tomatillo/Chile Morita Salsa, make this first so the flavors meld.

24 Tomatillos, husks removed by soaking them in water, briefly
6 Chiles Morita (they kind of look like dates) rinsed
2 Cloves of Garlic
1 Teaspoon salt (or to taste)

Roast the tomatillos until charred on a comal or in a cast iron skillet. Once charred and soft or just about to burst, pluck them off the heat and drop them into a blender.

Put the chiles morita onto the same comal or skillet and let them puff up. This will only take a minute or two. Remove the moritas, put them into a small bowl and cover with boiling or very hot water to rehydrate the chiles, about one minute max.

Remove the stems and roughly chop the chiles, put them in the blender and include the seeds. Save the water used to rehydrate the chiles. Add the garlic and salt to the blender, cover tightly and blend. If the salsa comes out too thick for easy pouring, add some of the warm water from the rehydration process. Blend again, pour into a bowl and set aside.

Building the Chilaquiles

2 Pounds Arrachera or Flank Steak

Pepper and lightly salt the arrachera and cook on a grill pan, cast iron skillet or BBQ grill, until at least medium done, about 8 minutes, depending on the thickness of the steak. Let sit on a cutting board for at least 5-10 minutes to maintain juices, then cut into 1" strips.

Eggs to fry, any style, amount depends on the number of people eating. Set aside.

Tortilla chips, freshly made or bagged and unsalted

Additional toppings for the chilaquiles include: Chopped Onion, Queso Fresco Crumbled and Sour Cream or Crema Fresco

To assemble the chilaquiles, put a handful (or more) of chips on a plate. Pour or spoon the salsa over the chips enough to wet them. Place the arrachera strips across the chips. Place the eggs over the meat. Sprinkle the chopped onion, crumbled cheese over the eggs and then a dollop or two of the cream. Pepper to taste.
