El Puerco de Oro: The Taco That Started a Love Story

Puerto Vallarta, Mexico – Some restaurants become favorites because of the food. Others become unforgettable because of the memories made there. El Puerco de Oro holds a special place in my heart for both reasons.

This was the location of my very first date with my boyfriend.

Originally, he had invited me to join him at a wedding in Punta Mita. While I appreciated the invitation, I remember thinking, We should probably meet first before I agree to spend an entire day with someone in a city I’ve never been to. When I suggested we meet first, he laughed and said, “Of course, of course.”

I let him choose the restaurant.

As someone with an incredibly sophisticated palate, he takes food seriously. He’s an exceptionally talented mixologist who has a deep appreciation for Mexican cuisine and incredible flavors. When he recommends a restaurant, people know they can trust his opinion. He chose El Puerco de Oro, and within moments of taking my very first bite, he jokingly told me he knew I was a keeper.

After tasting those tacos, I completely understood why.

What makes El Puerco de Oro so unique isn’t just the flavor – it’s the story behind it. The taquería celebrated its sixth anniversary on August 8, and it all began with Chef Joel Ornelas, the head chef and owner of one of Vallarta’s best restaurants, Tintoque. He is known for serving gourmet pork belly at his restaurant; he dreamed of making those same incredible flavors available to everyone in the form of street tacos.

He approached his mother, Ana Martina García Guzmán, with a simple but life-changing idea: “Mom, quit your job. I’m going to open a taquería for you.”

Today, Ana proudly runs the restaurant, while every recipe still comes from Chef Joel himself. It’s truly a family business built on passion, creativity, and exceptional food.

Unlike most taquerías, where meats are traditionally prepared on a griddle or spit, El Puerco de Oro slowly roasts its pork until it becomes unbelievably tender before finishing it with just enough lard to create a perfectly crisp exterior. The result is pork belly that practically melts in your mouth while still delivering that satisfying bite.

And then come the toppings.

The fresh garnishes, homemade salsas, and endless combinations of flavors elevate every taco into something memorable. Every bite somehow gets even better than the last.

As much as I’d love to tell you about everything on the menu, I have to be honest – I really haven’t ventured very far. Why would I? The pork belly tacos are simply that good. Every single visit, they’re consistently tender, flavorful, and absolutely addictive.

One thing I never skip is their oat horchata agua fresca. It’s refreshing, creamy without being heavy, and the perfect companion to the richness of the pork belly.

Perhaps one of the biggest surprises is the value. In a world where restaurant prices seem to climb every month, El Puerco de Oro delivers gourmet-level quality at prices that are incredibly affordable. You receive exceptional food, warm service, and generous portions without breaking the bank.

We’ve returned time and time again over the year, and the experience has never disappointed us. The consistency is remarkable, the flavors are unforgettable, and every visit reminds me why this little taquería became part of one of my favorite memories in Puerto Vallarta.
