
Zapopan, Jalisco, Mexico – Jalisco has earned a place in the record books after officially setting a new Guinness World Record for the world’s largest guacamole. The massive preparation weighed 12,646 kilograms (more than 12.6 tons), nearly doubling the previous record and showcasing the strength of the state’s agricultural and culinary sectors.
The record-breaking feat took place at the Pan American Charros Stadium in Zapopan, where more than 600 people came together to prepare the enormous batch of guacamole. Participants included avocado producers, packers, volunteers, social service providers, and more than 300 students from the International Gastronomic College.
After reviewing the evidence and verifying compliance with Guinness World Records guidelines, certifying judge Alfredo Arista Rueda confirmed that Jalisco had surpassed the previous record of 6.8 tons, which was established earlier this year in Tancítaro, Michoacán.
Addressing the crowd, Arista noted that Guinness World Records aims to make the world “more interesting, more fun, and today, more delicious.” He officially declared Jalisco’s achievement a new world record, drawing cheers from thousands of attendees.

Governor Pablo Lemus celebrated the accomplishment, highlighting its potential to strengthen tourism, economic development, and international recognition of Jalisco’s culinary heritage.
“This achievement shows the greatness of the people of Jalisco,” Lemus said. “We broke the previous record by reaching more than 12 tons of guacamole.”
The governor also emphasized the opportunity to expand export markets for Jalisco-grown avocados. In addition to established markets such as the United States, Canada, and Japan, he pointed to South Korea as a promising destination for future growth.
The scale of the challenge was reflected in the ingredients required. Organizers used more than 90,000 avocados, along with 1,300 kilograms of tomatoes, 600 kilograms of onions, 250 kilograms of cilantro, 120 kilograms of serrano peppers, 65 sacks of lemons, and 100 kilos of salt.
Eduardo Ron Ramos, Jalisco’s Secretary of Agriculture and Rural Development, said the record helps shine a spotlight on the state’s avocado industry and the quality of its agricultural products.
He noted that the project demonstrates both the strength of Jalisco’s producers and the richness of the state’s gastronomy, while creating greater visibility for avocados grown in the region.
Saúl Medina Tejeda, president of the Association of Avocado Producers and Exporters of Jalisco (APEAJAL), credited the success to collaboration among producers, businesses, and government officials working toward a common goal.
“This achievement demonstrates what we can accomplish when we unite and share the same vision for Jalisco,” Medina said.
The effort also received support from local businesses, including Dulces de la Rosa Director Enrique Michel Velasco, whose candy company provided specialized machinery used in the preparation process.
Thousands of people attended the event to witness the historic moment. Once Guinness officials completed the certification process, the giant batch of guacamole was distributed among approximately 9,000 spectators. Additional portions were donated to food assistance organizations, including the Food Bank and municipal DIF offices across the state.
The new Guinness World Record stands as a symbol of cooperation among producers, businesses, volunteers, educational institutions, and public officials. Beyond setting a new global mark, the achievement highlights Jalisco’s growing reputation as a leader in agri-food production, innovation, tourism, and Mexican cuisine.
