Festival del Ceviche y Aguachile Returns to PV Feb. 1

Puerto Vallarta, Jalisco, México – Puerto Vallarta is preparing to host a beloved local tradition as the Festival del Ceviche y Aguachile returns for its 19th edition. On Sunday, February 1, Parque Parota will transform into a culinary hub where residents and visitors can gather from 12:00 pm to 9:00 pm to celebrate the coastal flavors that define the region.

With free admission, the event invites everyone to enjoy more than 40 varieties of ceviche and aguachile prepared by seafood restaurants from across Puerto Vallarta. Guests can sample classic recipes as well as creative interpretations, all served on tostadas and offered at reasonable prices.

Ceviche, a traditional Mexican dish, is made with fresh fish or shrimp marinated in lime juice and mixed with ingredients such as tomato, onion, and green chiles. In the Banderas Bay region, local versions often include carrot, cucumber, cilantro, and other fresh additions. Aguachile, another regional favorite, typically features raw shrimp with lime juice, cucumber, red onion, and ground chiles, served with avocado and tostadas and commonly paired with beer or tequila.

Because each participating restaurant brings its own signature recipe, the festival provides a rare opportunity to sample a wide range of flavor profiles in a single afternoon. A highlight of the festival is the friendly culinary competition, where guest chefs will serve as judges and award prizes to the top three ceviche and aguachile recipes created by participating restaurants.

In addition to the to the seafood stalls, the festival will feature live music, a children’s area, food and beverage zones, restrooms, and a bazaar area. Local beverage brands, craft beer, and pastries will also be available, adding to a full day of dining and entertainment. This year’s special guests include Los Chicos del Bazar, showcasing the work of more than 40 young entrepreneurs.
