
Puerto Vallarta, Mexico – Get ready to tantalize your taste buds! This summer, Puerto Vallarta is buzzing with excitement for the 10th anniversary of the Ceviche and Aguachile Festival. This special event, now in its 18th edition, promises a delightful Sunday, July 27th, filled with culinary delights and family fun.
For the first time ever, the festival will unfold at Parota Park, conveniently located between the Marbella condominiums and the Puerto de Luna Hotel. From 12 noon to 8 pm, visitors can enjoy free admission and immerse themselves in a joyous atmosphere.
The festival offers a fantastic experience for all ages. Families will appreciate the bounce house for children, while everyone can savor a wide selection of desserts. The star of the show, of course, will be the incredible array of ceviches and aguachiles. Ten local restaurants are set to participate, showcasing over 40 unique versions of these iconic regional dishes.

For those curious about the specifics, Ceviche in Puerto Vallarta is a unique take on the classic. While typically made with fresh fish or shrimp marinated in lime juice with tomatoes, onions, and green chilies, Banderas Bay area chefs often enhance this dish with carrots, cucumber, cilantro, and other fresh ingredients.
Similarly, Aguachile, as its name suggests, features fresh raw shrimp, cucumber, red onion, lime juice, and pulverized chiles, often serranos or jalapeños, blended with water. This refreshing dish is frequently served with avocado and tostadas, perfectly paired with a cold beer or a cocktail made with tequila.
Beyond the incredible food, the festival will be brimming with entertainment. Talented local musicians and lively DJs will set a festive mood throughout the afternoon, ensuring there’s always a reason to tap your feet. To help everyone stay cool and refreshed, stalls will offer a variety of aguas frescas, local craft beers, and unique raicilla cocktails.
Organizer Edgar Cisneros shared that the festival was created to spotlight Vallarta’s culinary talent and support local restaurants. “It’s been hard work, but we do it with a lot of passion,” he said.
