
Puerto Vallarta, Jalisco, México – Representatives from Vallarta Institute of Culture recently traveled to the mountain town of Mascota to meet with master raicilla producers and strengthen collaboration ahead of the upcoming 9th annual Dama Juana Raicilla Festival in Puerto Vallarta.
Surrounded by agave fields, traditional ovens, and the distinctive aroma of this regional spirit, the institute’s director, Ricardo Josué Martínez Andrade, met with members of the Mexican Council for the Promotion of Raicilla and local producers to discuss the importance of preserving and promoting one of Jalisco’s most historic beverages.

During the gathering, participants shared experiences about raicilla production and highlighted the cultural value of a craft that has been passed down through generations. Producers described the care and dedication required to maintain traditional methods that define the drink’s character and authenticity.
Among the distillers present was Manuel Salcedo Gutiérrez, a third-generation master raicilla maker with more than thirty-three years of experience. Salcedo produces several labels that represent different styles of the spirit, each rooted in time-honored techniques.
At his distillery, the production process continues much as it has for decades. Agave hearts are first cooked in a traditional masonry oven, then milled before undergoing natural fermentation. The liquid is later distilled in stills, allowing the unique aromas and flavors of raicilla to develop and remain true to its heritage.
The meeting also recognized the dedication of local producers who continue to safeguard this tradition. Their work not only preserves a key part of Jalisco’s identity but also supports rural communities and promotes regional gastronomy.
The visit was carried out with the support of the municipal government led by Mayor Luis Munguía and forms part of the preparations for the ninth annual Dama Juana Raicilla Festival.
The event will take place March 13–15 on the esplanade of the Cuale Cultural Center. The festival will celebrate the heritage of raicilla with tastings, cultural activities, and opportunities for visitors to learn more about the traditions and craftsmanship behind this distinctive spirit.
