
Puerto Vallarta, Jalisco, Mexico -Puerto Vallarta has earned a place in one of the world’s most respected culinary guides. Two local restaurants, Icú and Pancho’s Takos, were officially recognized in the 2026 MICHELIN Guide Mexico, marking a milestone for the city’s growing reputation as an international dining destination.
The latest MICHELIN Guide Mexico selection was unveiled on May 20 during an awards ceremony in Guadalajara, where inspectors highlighted 29 Starred restaurants across the country. One of the biggest developments this year was the guide’s expansion into new regions, including Jalisco, Puebla and Yucatán.
The addition of Jalisco places Puerto Vallarta alongside some of Mexico’s most celebrated culinary destinations and is expected to strengthen tourism and restaurant growth throughout the state.
While Puerto Vallarta does not yet have a Michelin Star restaurant, the inclusion of Icú and Pancho’s Takos in the Michelin Selected category confirms both establishments were formally evaluated by Michelin inspectors and recognized for the quality and consistency of their cuisine.
The recognition also reflects Michelin’s evolving philosophy. Rather than focusing exclusively on luxury dining, the guide increasingly celebrates restaurants that express a strong local identity and deliver excellence within their culinary style.
Together, Icú and Pancho’s Takos showcase two very different but equally important sides of Puerto Vallarta’s food scene.

Icú represents contemporary Mexican gastronomy with a chef-driven approach aimed at culinary travelers seeking refined dining experiences. Located in the Zona Romántica, the intimate restaurant is led by chef-owner Mauricio Leal, whose seasonal menus highlight Mexican ingredients and regional flavors. Michelin inspectors praised the elegant dining room, Mexican-focused wine list, and standout dishes such as the blue corn quesadilla de pulpo y pancetta, risotto adobo with shrimp or fresh catch, and flan de cajeta finished with caramel sauce.

Meanwhile, Pancho’s Takos was recognized for its authentic regional taco culture and longstanding popularity among both residents and visitors. Also located in the Zona Romántica, Pancho’s Takos represents authentic regional street food culture. A long-standing favorite for locals and visitors alike, this bustling spot often requires a patient wait in line and cash on hand, but the reward is exceptional. Diners enjoy overflowing portions of thinly sliced al pastor meat piled high on corn tortillas, finished with fresh cilantro and diced onion.
The guide’s recognition of both restaurants highlights Puerto Vallarta’s ability to balance innovation with tradition. One offers elevated contemporary cuisine, while the other celebrates accessible street-style flavors deeply connected to local food culture.
Although neither restaurant received a Michelin Star this year, their inclusion in the Michelin Selected category signals growing international attention on Puerto Vallarta’s evolving culinary identity and its rising role within Mexico’s tourism and gastronomy landscape.
